世卫组织报告将“加工肉制品”列为致癌物

这两天,一则跟火腿、培根有关的消息火了。世界卫生组织近日发布报告,宣布加工肉制品为“致癌物”。此结论一出,舆论哗然,不少人谈“加工肉制品”色变。

世界卫生组织称,培根、香肠、火腿等加工肉制品确实会致癌。
加工肉制品(processed meat)指经过盐腌(salted)、风干(dried)、发酵(fermented)、烟熏(smoked)或其他处理方式、用以提升口感或延长保存时间的任何肉类,包括培根(bacon),香肠(sausages),热狗(hot dogs),腊肠(salami),咸牛肉(corned beef),牛肉干(beef jerky)和火腿(ham),以及罐装肉(canned meat)及肉制品基调味酱(meat-based sauces)。
Its report also said 50g of processed meat a day increased the chance of developing colorectal cancer by 18%. Meanwhile, it said red meats were "probably carcinogenic" but there was limited evidence.
该组织发布的报告还称,每天食用50克的加工肉制品会使患结直肠癌的风险增加18%。同时,该组织称,红肉也“可能致癌”,不过目前证据有限。
该机构将致癌物的风险分为“致癌(carcinogenic)、致癌可能性较高(probably carcinogenic)、可能致癌(possibly carcinogenic)、致癌程度不确定(not classifiable as to its carcinogenicity)和可能不致癌(probably not carcinogenic)”五个级别。来自10个国家的22名专家分析了约800份有关肉类饮食与癌症间关联的研究后,编写出了这份报告。
据悉,这是国际癌症研究机构首次对肉类进行评估。但该机构并没对此提出具体意见,但建议人们“限制红肉的摄入量(limit consumption of red meat),尤其避免食用加工肉制品(avoid consuming processed meats)。”
