传说，当地有一位母亲，因家里贫困，只剩下一点点面粉，正在为给孩子做些什么东西吃而发愁。邻居们得知后，凑来了一点西红柿和奶酪。这位母亲就将面粉和成面团烙成饼，将西红柿切碎涂在上面，再把奶酪弄碎撒上，然后放在火上烤，就成了香喷喷的比萨饼。

还有人认为比萨源于中国：当年意大利著名旅行家马可•波罗在中国旅行时最喜欢吃一种北方流行的葱油馅饼。回到意大利后他一直想能够再次品尝，但却不会烤制。一个星期天，他与朋友在家中聚会，马可•波罗把其中一位来自那不勒斯的厨师叫到身边，描绘起中国北方的香葱馅饼来。那位厨师按马可•波罗所描绘的方法制作。但忙了半天，仍无法将馅料放入面团中。马可•波罗提议将馅料放在饼上吃。该厨师回到那不勒斯后按此法配上了当地的乳酪和作料，大受欢迎，从此“比萨”就传开了。（百度知道）
